Chicken Marinade Ingredients
- ¼ cup olive oil
- 2 tbsp lemon juice
- 2 tbsp honey
- 1 tbsp dijon mustard
- 2 tsp minced garlic
- 2 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
Sauce Ingredients
- ½ plain Greek yogurt
- ¼ cup barbecue sauce
- 2 tbsp dijon mustard
- 1 tsp lemon juice
- 2 tbsp honey
- ¼ tsp salt
- ¼ tsp minced garlic
- ⅛ tsp pepper
Sandwich Ingredients
- 4 4 oz cuts of chicken breast
- 4 whole wheat buns
- Lettuce
- Sliced tomato
- Sliced onion
- Sliced cheese
Directions
- In a small bowl, combine the marinade ingredients.
- Place the four cuts of chicken in a shallow dish. Pour the marinade over the chicken. Cover the chicken and marinate in the refrigerator for 1 hour.
- On a grill or skillet, cook chicken over medium heat for around 3 minutes per side (or until internal temperature is 165 degrees Fahrenheit). Once the chicken is finished cooking add the sliced cheese.
- In another small bowl, combine the sauce ingredients.
- Assemble the sandwiches by spreading sauce on each side of the buns, adding the lettuce, tomato, onion, and chicken.
