Make a healthier gluten-free cookie pizza for your 4th of July celebrations! It’s the perfect patriotic summer dessert that looks amazing and is easy to assemble. Bake this for your next party and you’ll have everyone asking for the recipe!
INGREDIENTS
Cookie Base
- 2 cups oat flour
- 1/2 cup almond or coconut flour
- ¼ cup coconut sugar
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1 egg
- 1 1/2 tsp vanilla
- ¼ cup butter
- ¼ cup honey or agave
Topping
- 2 oz softened cream cheese
- ½ cup cottage cheese (blended)
- 1/2 cup vanilla Greek yogurt
- ¼ cup honey or agave
- 1 tsp vanilla
- 1/4 tsp cinnamon
Fruit
- 3/4 cup blueberries
- 3/4 cup chopped strawberries
- 1/2 cup raspberries
- Optional: If you are creating a flag design, sliced bananas are a great addition.
DIRECTIONS
- Preheat the oven to 350 degrees and lightly grease a cookie sheet.
- Mix together dry ingredients, then add all wet ingredients until combined.
- Roll the dough into a large ball and then using a rolling pin evenly roll the dough to fit the pan.
- Bake for 15 minutes or until the edges are golden.
- While crust bakes, mix together topping ingredients in a food processor or blender.
- Let crust cool and frost the entire cookie.
- Decorate with fruit anyway you’d like! We recommend a flag pattern!
